Cut the chicken breast or tenders into 1-inch cubes, keeping them as even as possible for even cooking.

Season the chicken with Italian seasoning, salt, and pepper. Add about 1 teaspoon of minced garlic and a tablespoon of lemon juice. Mix well and set aside.

Peel and chop the onion, keeping the root intact to avoid tears. Cut the onion into small minced cubes.

If using, chop the mushrooms and set them aside with the onions.

In a blender, combine 300g of cottage cheese, 200g of Greek yogurt, and 50g of Parmesan cheese. Add about 100ml of milk and blend until smooth. Set the sauce aside.

Heat a pan and spray it with olive oil. Cook the chicken over medium to medium-high heat until almost done.

While the chicken is cooking, start boiling water for the pasta and cook it according to package instructions.

Once the chicken is nearly cooked, add 150ml of chicken broth to the pan.

After the chicken is fully cooked, turn off the heat and wait about 1 minute before adding the sauce. Do not simmer the sauce to prevent curdling due to the lemon juice.

Mix in the cooked pasta with the chicken and sauce until well combined. Plate the dish and garnish with chopped parsley if desired.
